You don't want anything with a messy sauce and you want something that doesn't entail last minute preparation. Put a roast beef in the oven with baking potatoes so the potatoes cook at the same time as the beef. Get a spinach souffle or other item that cooks and you don't have to stand and stir it. Make a salad in advance and leave it in the refrigerator. Make brownies in advance.

You don't want anything heavy, so why not go w/ a bunch of appetizers? Things like mini sandwichs, fresh veggies and fruit w/ dip, chicken chunks, etc. Most of these items can be purchased and prepared the day before, so you won't have to worry about anything that day! Add a sparklly drink like sparkling grape juice (non-alc) and have a blast.

I think the best answer to this question would be grilled chicken breast, mashed potatoes and gravy, biscuits, steamed vegetables, and wild rice with apple cider if you don't want to drink any alchohal (wine,etc.) For dessert, chocolate-covered strawberries with whipped cream on top might please your prom date.
